today’s lunch: caramelized onion & roasted cauliflower tart with cheddar and romano and mascarpone cheese. it was really freaking delicious, but if i made it again, i wouldn’t make a pie crust with egg in it (too rich) and i wouldn’t use mascarpone — i’d add an extra bit of milk and an extra egg or two, and make this more quiche-y. it’s just too rich with that much cheese in it. but delicious.
i forgot to take a picture yesterday. and my freaking camera has a grudge against pictures that are in focus and therefore won’t take any. and it’s really cold in my bedroom tonight for no reason at all. and i am probably not going to get out of bed tomorrow except to make stuffed artichokes and macaroni and cheese for supper. oh, and to watch curling.
