weekly picture of pancakes! this week it’s strawberry pancakes. i sliced the strawberries and let them macerate in sugar for a while before i started making the pancakes. i thought for a minute or two that i’d drop the strawberries in one by one, the way i do with blueberries, once the pancakes were in the pan. but that didn’t work — the strawberries burned. plus the batter needed to be slightly looser anyway (no humidity today!), so i just dumped in the strawberries with their sugar syrup. the pancakes are slightly pink, but no worse off for it. plus: delicious.
i’m going to have to practice cooking things in the cast iron pan, though — it gets too hot, and then turning down the flame makes it too cold, plus it’s very uneven. i’m used to the teflon pans and compensate automatically; i figure that with a few weeks of practice, i’ll get better at cooking in the cast iron, too, but for now it’s annoying me that i’m not already perfect at it.
